Mini
Pecan Pies

Ingredients:
-
3 eggs
-
3/4 cup granulated sugar
-
1/2 cup brown sugar
-
1 cup corn syrup
-
2 tbsp softened or melted butter
-
1 tsp vanilla (and a little extra)

1/8 tsp salt
-
1-2 cups chopped pecans
Directions:
-
Beat eggs
-
Add sugars, syrup, butter, vanilla and salt
-
Stir in chopped pecans
-
Cut chilled pie dough to size of tart or cupcake pan. (I thin the cut crusts with a rolling pin for a light, crispy crust)

Spray pan
-
Lightly press crusts into pan
-
Fill crusts almost full
-
Bake at 350 for 15-20 minutes (depending upon tart sizes)
-
Cool on rack allowing to cool completely

Bonus Tip:
Left over crust?
-
Cut remaining dough into strips
-
Brush with melted butter
-
Dredge in sugar and cinnamon mixture
-
Twist strips and place on baking sheet
-
Bake 12-15 minutes
